Editor's Choice, LOLwhut?
What a weird name. Whose editor's? How is it different from a normal version?

Not long after that Epic released the Mega Bonus Pack (for free) which included all the ECE stuff except the mods (which you can still download for free), and added a few more new maps.

The Steam version includes the Mega Bonus Pack, but not the mods from the ECE release.

There are a few other bonus maps that aren't in the Steam version for whatever reason.

These are:

Windows XP Bonus Maps: ONS-Aridoom and ONS-Ascendancy. (There was a bit of controversy at the time, since both maps had "official flags" and couldn't be pushed by servers.)
Streamline Bonus Map: AS-Confexia.
Epic Bonus Map: DM-Forbidden.
Epic Bonus Map: ONS-Icarus.

No idea, it's just the name. It's like those GOTY or Legendary editions of games that include all the addons and other extras. The disc version of ECE had a lot of extra content that isn't in the Steam version - but all those were free mods, so no big deal.

Thanks. I just thought it was weird they've named it that, even though "GOTY Edition" was a thing since at least the year 2000. (Deus Ex GOTY Edition)
