If you get hit by his arrows, it will reduce your max HP each time but there is a cap which is when the achilles voice line gets triggered.
If you time your shield throws for when he's about to attack, they have a higher chance of not also dealing damage, but staggering his attack. If you throw it after he attacks, there's a chance you can miss entirely because his AI will dodge after firing.
If he's cornered he will try to strike you with his daggers. His melee attack is super telegraphed, meaning you can dodge out of the way even while you're mid attack because the animation is slow enough, or spartan kick it to cancel it and get in free hits.
You can use the ledges like someone said, but I would not count on them, there are small gaps in them that an arrow can slip through, and if he grenades the wall and you're not quick enough, the fact it has a hitbox means the grenade actually explodes on it much closer than where you think it will and as a result you get tagged from it. His AI will also eventually path to the side making it so you can't hug the horizontal part of the wall anymore.
If you don't have stamina to dodge, blocking is always a viable option. In fact, it reduces the damage of his arrow by something crazy like 80%, meaning although you take damage it's a scratch.
If you manage to pick up Fury potions on the way, you can spartan kick a bunch of times in succession without needing to build fury with normal hits.

Unfortunately, no, I managed this my first go around by doing the leaping heavy attack from sprinting, and was really surprised that it just immediately cut to an obviously "Achilles Died" cutscene, I figured about half-way though his health bar that he was the Dark Souls Prologue Boss but was kind of sad there was no easter egg for it.
