Edit: Forgot to add, trees do grow back eventually, but even when they don't, you can still get lumber at your cult in the future.
afaik trees that re-grow don't grow into the giant trees you start with. And rocks obviously don't grow back.

Sort of? Materials are materials. Like I said there are ways to gather lumber at your cult that you can unlock. I don't think it's that different, but I guess I understand why you'd want lumber from trees specifically. I don't remember how big the trees you start with are, but the trees that grow back aren't exactly small. It would be nice to plant your own trees, but trees do respawn, so that part of the game does seem to be working as intended. Ultimately it doesn't impact the game (or the lumber for that matter), so I didn't get what the big deal is.
Why are you assuming i'm struggling to gather resources. If i needed resources i wouldn't be avoiding gathering them.
I asked if it's possible to STOP followers harvesting resources, not how to get resources.

That isn't what i want at all.
I don't need lumber from trees, since i can just use the buildings that generate lumber and stone. I want the trees to remain.
I didn't think you were struggling, I thought maybe you wanted to gather lumber from only the trees when you said protect the natural materials, but I see what you're saying now. There isn't a way to stop them, other than keep them busy with other tasks and redirect them.
I still had unbuilt buildings and an untended farm, but somebody decided cutting the tree was priority, even though my untended lumberyard is right beside it...
