Not like they build alcohol tolerance over time or anything.
Ultimately the drinkhouse is a bit of a noob trap - spending resources on making your followers break stuff, kill each other and barf everywhere is a lose-lose.
You still kind of need it for Sin generation, but my advice is to give someone a Sin confession and then serve them a drink to fill the rest of the bar. One person being drunk is fine - they won't start fights, you can just swing by when they're sober to clean up their damage and messes.
Other than roleplay or wanting to add to the challenge, never queue up a bunch of drinks and let your followers get bevved up.
It's funny the first time, I suppose, but the humor's pretty shallow all-round, and it ends up just being yet another tedious addition to this game.
