i dug out my xbox 360 controller for this game, it's much easier to play the game with.
On normal, with a demon, the hunger and the diseased heart upgrade... you can easily start a run with 10 red hearts, 1 spirit heart and 3 diseased hearts
Post game, you get two new fleeces that can help with that this as well, tho I wish you could unlock them earlier. One takes away your ability to dodge to heal you every room and pretty much doubles your health. The other allows you to use fevor to heal
The one that gives "spirit" hearts is actually a little misleading, as spirit hearts in this game are the hearts with a yellow online on them. You can easily double your health with a demon that gives you those hearts and it's of a decent level, which can be shown more by the demon changing into a purple color instead of red
I used either the tarot/white fleece until I had enough gold to always buy extras during a run.. and then I'd switch to the gold/combo meter fleece (this doesn't matter in the final boss since you don't get cards and you're on default fleece) BUT i will say- Godly Dagger was what helped me beat the final boss and I got to the final form with pretty much full health. Then it was just being patient around the mini-bullet hells and got it finally.
When I looked up on stuff about the game now that I beat it.. i facepalmed hard when I read about the summoning circle. lol That coulda.. saved a few headaches with some more lengthy crusades, but the game is doable without them.. BUT I also play a lot of stuff like Hades, Dead Cells and Rogue Legacy. Which means limited healing/rarely if ever any pets and a whole lotta dodging. Like I rarely move normally, i'm justa rolling sheep of doom. Anyway, I hope any of this scrambled-brains nonsense can help you hone in on a strategy that works for you.

It's a neat fleece as it gives you a massive amount of health, heals each room and stacks with the demon health bonus. I had two rows of hearts using it
You *will* get hit more often tho, since you can't avoid certain attacks, but I've face tanked bosses cause I'll kill them faster then they could kill me because of all the health
"Spirit heart" demon should fix all your health issues. Just make sure to get a high level one (give a long live necklace to a proper follower). IMO killing faster than getting hurt is better strategy, so also bring super ripped bomb demon.
TBH you don't actually NEED that much health if you're good with the type of this game. Normally explorer roguelites are stingy with healing to promote skill. Unlocking an achievement where you need to finish a whole row in purgatory (endgame content) is where your game knowledge is tested, because you need to get through all locations, beat all bossses including final one in one sitting from start to finish. Kinda too bad that games postgame progression doesn't really make you want to grind the purgatory.

I looked at the fleeces and I didn't see one that said anything bout giving you hearts and taking dodge roll away. I haven't unlocked all of the fleeces but I did look at them after @StopItStepBro mentioned it.
