Gonna make the rest as a hidden answer as it involves some spoilers and my exact recipes.
So first off you have to make sure to have at least 21 aroma in your first dish so you go first in the first round to avoid his -Sophistication sauce. The dish I used was, in order of adding to the pan: Cucumber Squid, Rice, Spectral Chutney Sauce, Milk. This doesn't beat him in the first round but scores ~222pts which is at least close to the 275 he gets. Second dish it doesn't matter if you go first or not so no worries on aroma. I used in order: Pangun Meat, Marconnaise Sauce, Seaweed (which sucks as an ingredient but hits both of the judges 50 pt requests), Cuttlefish. The cuttlefish really boosts your vigor and spirit and you don't lose very much at all from the -soph you face.

Finally beat him and after that the rest of that league was easy going, the league after that with cat people was the easiest of the 3 leagues. I believe there is 1 more but i have not yet unlocked it.
I have 1 side quest to find a smuggler, then the main mission to beat the mage's in a cooking contest.
