What does completing lagniappes sets do?
I've completed several sets that are qualified as "forbidden knowledge" but it doesn't seem to unlock as much as a text. Pressing the "show set bonus text" doesn't do anything.

It depends on the set. Most of them unlock a bonus text that should show up when you press the indicated button prompt. If it doesn't, that would be something to report to the developers via the link in the following thread:

Indicated button prompt? When you inspect the items? I have been wondering this myself, since I have not seen any hidden knowledge so far. I unlocked a cabinet though.

For the forbidden knowledge ones, you press the button that's listed at the bottom left of the screen to read them; I think it's Space by default. If that doesn't work (it wouldn't work for me sometimes when I first unlocked them), exit the lagniappes menu and return to it and it should work.

Like everyone said, the "Forbidden Knowledge" is supposed to be a text blurb about the items you got. You're supposed to press a button to make the text appear.

Though some Lagniappe sets actually unlock different endings (the ones that "unlock a secret objective"). That being said, I couldn't find a complete guide for them.

Sadly right now the secret objective ones are bugged and the game won't trigger the endings.

The only one that works at the moment is the "All the world's a stage" set (Box of Biscuits, Toy Talisman and Curious Napkin) where you'll get an extra prompt with Emily before the game's finale to trigger the ending.

For the secret endings:

Ending 3 - Edward's alternate ending
- Step 1: Complete the Lagniappe set "A Goat without Horns".
- Step 2: Interact with the new interaction point at the wishing tree in chapter 4.
- Step 3: During cutscene where the black goat is summoned, there will be a short moment where you can control Edward. Look to the tree instead of Emily.

Ending 4 - Emily's alternate ending
- Step 1: Complete the Lagniappe set "Dying with dignity",
- Step 2: Interact with the new interaction point in Dr. Gray's apartment.
- Step 3: During the cutscene where Emily confronts the Dark Man after returning from the Arctic, there will be a short moment where you can control Emily. Pull to the right.

Ending 5 - The wholesome ending
- Step 1: Complete the Lagniappe set "All the world's a stage".
- Step 2: Interact with the point next to the wishing tree in chapter 5 and choose "yes" when asked "Give Grace something to play with?"
