If you have only one small village, maybe there will always be a certain amount of people who die, despite having medicine.

Build lots of warehouses near your farms and industry, Don't have your workers walk so far.
Medicine works better than medicinal herbs.
Make your main roads 2 blocks wide. Cuts down on congestion
Last night I had a pretty sizable population approaching 800, when all of a sudden they all just stopped working, no one was bringing in food, and I could not figure out how to make them work again. They still consumed food, but no one was producing anything from food sources anymore. Everyone started dying of starvation. Sounds like this bug still exists.
