2. Is there anything permanently missable, even rewards for beating the game in a specific way?
3. Is this game identical on all platforms, including the Switch version having an in-game achievement system?

3: The game is as identical on all platforms as possible. In a coming update, there will be gyro support for PS5 and Switch, as well as PS5 controller on PC but that's about it in terms of differences :)

Does this mean the Switch version has an achievement equivelent, and is there anything that takes advantage of motion controls added in that other versions can't utilize?

There's an in-game achievement list on all platforms! Currently, motion controls are not implemented but we are working on it :)
