After victory you are not allowed to continue the session. Just another example to pay more and get less.

what are the victory conditions?
can i chose to conquer everything?

There is no turn limit per se, but there is an era progression. When you or other player achieve a milestone of any legacy path, era progression goes forward by a bit. If the modern era gets 100% progression and no one has executed his victory condition, the person which got the most milestones throughout all eras wins.

No. You can win if you kill everyone before you reach the end but that was it.

Bit seriously, how often do you really play until you killed everything? At some times you are so much overpowerd that no one else can compete against you. At this point you just click the rounds, move the units and wait. Do you really do that?

This ^^

Well, no. I have no idea what that means but the Just One More Turn... button is such a historic part and feeling of a Civ game it did feel strange when my first game just ended and I had no option to even look at the map or anything

I really dislike the forced era transitions. I just wish i could turn it off until someone reaches a golden age, not some arbritairy turn number.
wow no unlimited turn play? This is deal breaker for me I'm so glad I checked before purchasing

I wish I new this before I bought the Founders Edition. I was so excited for a new Civ, but now after my first play through I am just sad.

And Switch-A-Civ™
You can edit the UserOptions.txt file and enable playing after victory achieved. Just edit it and have at it.
