They will be a blast to play as when the age of exploration kicks off.

Spain and Isabella *not* having any religion-related bonus is really strange…

I knew the religion-play would be heavily limited in Civ 7, and had already heard that religion will be exclusive to Exploration Age only, but seeing this makes me suspect that religion would be even more downplayed and limited in the game than I previously thought.

Well religion was not the major factor for her expansion. It was for gold. Religion was mostly in Spain and Europe. It was after they claimed the land and took the riches that religion came into play.

They literally mention Inquisition, Reconquista, "dominating the world in the name of God and wealth" and so forth in the introduction pages for Isabella and Spain.... Isabella was a devout Catholic and religion indeed played an extremely important role in Spain's motive for world exploration and domination!

No it wasn´t world "dominance", thats because Isabella died way before the formation of the Spanish Empire, so his main interest was the consolidation of catholicism and the crown of castile in the Iberian peninsula.
About Spain, the monarchs were more focused on ruling Europe rather world "dominance", look at the main wars and the politics at the moment.

No, the main driving factor was exploration for a trade route, but then they found a new continent, so the focus was expanded into converting most of the population into christianity then with help of the natives, turned into territorial expansion and development of the land (esencially, transforming empty fields into towns and cities with many more economic activities).
