Can get back to that screen by opening the start menu from driving, and then it's on the left. Festival-something, I think? Sorry, the game takes a ridiculously long time to start up, or I'd check exactly. You can't go to it from the garage menus. It has to be from the first tab of the pause menu.
From the map, switch to filters, toggle All to clear everything, then toggle on the two red seasonal event items for races and stunts. That will show you right where they are, and if you mouse over the event it will tell you what the restriction is (or reward goal for things like speed zones and jumps). For races, make sure you have your AI difficulty set high enough (it's not that high) to win the car.
Oh, another thing to do is get your fast travel cost down to zero (break those dumb collectible boards) and buy the house that lets you fast travel to any road. That makes jumping to what you want to do much quicker. If you find hunting collectibles annoying, you can easily search up a map and drive around to get them and tag the houses so they show on your map. Looks like "Fairlawn Manor" is the fast travel house.
Just play the game the way you like it.
Races completed will show a gold trophy on them.
The levels in all these racing categories will unlock you some content (cars, clothes, quick chat text lines...). Some are very hard to max out like the street racing as there's not many races available, you'll end up grinding some of them.
Then about what to do, the festival playlist changes every week and has exclusive cars for you to unlock. If you check the car collection, you will notice ALOT of cars are not purchasable through the auto salon. That's where you get them. You can also get them from other players through the auction house but they're very pricy. I managed to buy 30 cars I missed since I haven't played and it ended up costing me over 200mil.
Lastly you can play ranked adventures to reach grandmaster in each category!
ps: Horizon life in the menus should help you check out your progression regarding levels in each category, there's not only racing to complete there! ;)
