Thats the only car you will ever need. You dont even need to tweak manual shifting or whatever for getting two stars. For getting three stars, maybe you do need to use manual shifting to enter the drifting zone in 3rd gear. But i already tell you, making three stars in drifting zones is pretty difficult. Even for advanced players. Keep that in mind.
You don't even have to do any tuning at first. Just putting a drift chassis on any of the popular cars (like 240sx, rx7, fairlady) is enough to make it easy to drift it. If you feel like the car is not moving through slides properly, i.e., it's rolling to a stop too quickly, then the easiest way to keep it moving for longer is engine modifications. And this goes without saying, but always use manual transmission. Clutch helps but you can do fine with clutch-free manual too. The reason why I suggest you to keep to manual without clutch is because pulling the handbrake on a speeding car without pressing the clutch will, naturally, stall the engine, and that will kill your drift before it can get going because you can't give throttle on a stopped engine xD
Most cars under 400hp and factory tune will be too weak to keep going through a slide on third gear. So you can either adjust the gear ratio or keep to the second gear.

Out of curiosity, today I tried the no. 118 Nissan 240SX FD. While you're right in that they're very twitchy and "slippery", I found it effective enough to net me my first set of drift zone 3 stars today.
I did also watch some Youtube content on drifting, and switched to manual for the attempts. It wasn't easy, but I did it. I think I can live with manual transmission for drift zones - it's just that I don't think I can handle rapid fire gear-switches in an actual race.

Clearly you dont really know what drift is.
In 90% of the cars, you NEED manual shifting. You cant make a car to shift to 3rd at your own will if you dont use manual shifting.
In special cars, of course, this doesnt apply since they are electric cars or one single shift cars. But its the same theory, you need to be at least in 3rd to reach three stars in ANY drift zone. For two stars, sometimes its enough to just go fast and drift, and YOU CAN DO THAT WITH ALMOST ANY SINGLE CAR. Three stars? thats a completely different story, but again if you dont even know what drift is, this explanations are useless.
Rimac? dont make me laugh. Thats the worst car for drifting, and it wont matter if you can go up to 250km/h (90% of the cars can go even faster than that) unless you stick to the road and you drift accordling. And the Rima is not fited for drifting, so yeah maybe you can get one star and maybe if you are lucky two stars. But forget about three.
There are three or four car exceptions to this rule, and one of the is the car i already mentioned, the Holden Torana (cant remember the exact name) that can be used for drifting even on automatic shifting because the car itself is already tuned from stock to be a drifting machine. The only thing you need to do is to check the speed to keep the car on the road (as a drifting car it slides A LOT), and thats about it lol.
I am terrible at drifting, and i only have three stars on half of the drifting zones, but just because i dont like to drift. But without having any single knowledge about drifting, one year ago i picked this car and i achieved two stars in all drifting zones, and three stars in some of them. That, for someone bad at drifting is an incredible achievement.
And i achieved this after i tried literally hundreds of cars, until i got the Holden Torana, it was like a frikking drifting machine.
Holden Torana is probably the car most recommended by experienced players to try for three stars drifting. If you cant reach three stars in this car, forget about drifitng.. really.
Drift club is a walk in the park compared with trying to achieve three stars in drifting zones.
