The virtual gallery, where you can find all your paintings, is not part of the demo. This is a mistake to have it mentioned in the demo, I am sincerely sorry about it.
So yes the paintings you are doing in the demo for clients are lost if not photographed.
BUT there is some hope, still. Here is quick workaround:
1) From the title screen, click the 'Open photos folder' button. You need to have taken at least one photo in game to see it.
2) This will open a windows explorer in a \camera folder. Go one folder up to \SuchArt
3) From there go to the folder \saves_Demo
4) In this folder you can find your saves. Go to slot_0 (or slot_1, 2 etc depending on your save) then \maps. Here you can find everything which has been painted in game and hopefully your paintings.
This won't be as nice as a neat photo, but at least you should find your painting :)
Again, sorry about it. I will remove the misleading virtual gallery mention and try to add a warning or something. Glad you enjoyed the demo, though!
