Report a translation problem
The ghoul dialogue option for her is the one about service, and is available from the start as far as I recall. I used the flirting options and tech help options first, but I'm not sure if either of those matter when it comes to recruitment. The tech help option drops costs for items in the shop, and the flirting is... flirting.
When I brought up ghouling her, there was a mission involving a mobster. I passed that, which unlocked the other ghoul options.
One of the options is a date, which can lead to a followup where you can have sex with her. Not sure if that requires a certain humanity score. Mine was at 4.
Another involves robbing someone, and it nets you $5000.
The last one involves a cop, and I think drops your Masq Breach level down. Mine was at 0, but the text pretty clearly indicates that it involves distracting the SI.
Sorry if this is incomplete and a little vague, but I'm drunk right now. Still, I figured you might as well get SOME sort of response, right?
I think the other two ghouls are Vani, from the labs, and Raul, from the very beginning of the game and then the migrant prison.

Elena also shows up on missions after you ghoul her, with options that use COM+Leadership usually.
I assume she can die, as there were several options during dangerous situations that were along the lines of "Protect Elena!", but I may be wrong.
Finally, there's an option to ride off into the night with her, as an ending.
EDIT: Oh, and something else worth noting: You get the option to feed from her during the date scenes (I chose not to), but as far as I've seen you can't use her as a free source of blood as a replacement for buying it or hunting.
Ghouls can definitely die. I got Vani killed towards the end of one of my runs.
I figured as much. My next run is going to be a high-humanity low-combat build who ghouls the vampire hunter and then does as much stupid ♥♥♥♥ as possible (such as swinging around a ninja sword with 1 Str, 1 Dex, and 0 combat) just to see how much I can mess up before I die, or my ghoul dies to save me, or my ghoul just up and leaves, or something like that.
The trick is going to be keeping enough blood to heal wounds while also engaging in suicidal actions whenever possible.
I know hitting 3 on Masq Breaches is a game over, hitting Humanity 0 the second time is a game over, taking too much damage is PROBABLY a game over, but I'm trying to see if there are any situations where the game just goes "No, ♥♥♥♥ you, you die, you DESERVE this, good DAY sir". I don't think talking ♥♥♥♥ to Lettow will do that, but I may have missed one or two opportunities. For example, I think saying "I did it because I could" might provoke a rage response, but he might just be too damn tired for that. A back button would be nice, to test stuff like this.
EDIT: Also, since Elena just kept popping up in mission stuff after being ghouled, and since the wolf familiar shows up in stuff from the start, frequently, if you have one... I'm going to go for both, just to see what happens.
