Where did this happen (realm depth/realm)?
Just started a new game to try reproduce this occurence, but I had no luck finding a Mimic so far.
From what you're describing it doesn't sound like a bug, more of an earlygame limitation set for... idk... game balancing reasons?
Additionally, enemy creatures will gradually grow stronger and at a certain point will always have a higher level than your creatures (we're talking hundreds, thousands or even millions here). It isn't as bad as it sounds though. You could say the game doesn't play fair, but you have many options to make your team so hideously overpowered that differences in level don't really matter anymore.
Concerning the Mimic incident, I didn't have any luck encountering one yet and my creatures are beyond level 20 now... :/
You better get used to facing unwinnable battles though, this game is all about team synergy/refinement and you'll face opponents that will counter your strategy and either outright obliterate your critters or lock you into a stalemate. The key to success here is preparation and you'll learn to do that properly with time and experience.

Some random tips you can ignore if you want to figure things out on your own
Unwinnable battles won't be an issue until after the main story, don't get scared off by that.
Just take the monsters as you get them, try not to waste time leveling or grinding for emblems unless you are having trouble with a boss but I suppose if you really like Efts and don't mind grinding go for it.
You mostly want the enemies attacking your class monster Dread Spectre because of its effect of reducing stats, so try provoking with it.
Killing a boss and getting new points to unlock new class talents is a big power spike. Like wane and unholy night early on or Languish if you want to use all Efts,
Levels don't matter for fusion.
Seriously just don't fuse a whole team at once since that would force you to go back to low zones, fuse 1 monsters , play a realm or two to catch the new monster up to the rest and fuse again,
Also higher level doesn't mean higher stats when you fuse, the game uses the monsters base stats so fusing level 1 monsters has no drawback other than taking a little longer to level them but taking the time to level a whole nother team up to match the level of your current team would be even slower than just doing it 1 by 1 with the low level tagging along to higher level zones.
I think it's a level cap thing? The highest level of blood grove (the god I want the tokens for) that I can do is 30. 31 gives the totem guy who gives different rewards. I've been re-running 30. My monsters level as I go. I just had the same thing happen despite killing 2 mimics on this floor previously. The message this time being "The mimic is level 38." I switched from defiler to necromancer and just defended and the perks managed to kill this mimic instead of hard-lock me. I can't find where the threshold is though because I don't know if it goes off of the highest level on your team, the average, or what.
In regards to the monsters, I know it's base stats. I just didn't want to lose my leveled up ones as I didn't want to have to re-level them whenever I wanted to unlock a new thing. I have to grind up the new team to story-level and right now I just want to fuse them and craft the items, then go between story and grind. I can do one at a time, but it still takes time. The last monster I added to my current party took many many runs before actually catching up to the rest of the team.
And there's a few different ideas I have for combinations so I wanted to experiment.
My dread guy is low level since I replaced him really early. I don't really like his skills as I prefer a turn 1 victory and his skill needs him to get hit first.
I am back to the story. The story requires new story beats every 3 levels and 3 levels are very fast to go through so I was enjoying the mind-off grind. We're back to story though so no worries! I do appreciate the tips
In which case, defend/provoke/skip turn so that the Mimic eventually has its turn, thus removing its Invisible perk, and you'll be able to attack it.
Please explain how, without using Spell ID numbers.
If the spell is available (ethereal or otherwise) it will be cast.
To clarify, you can cast ethereal spells provided you have access to the spell gem in the castle.
Your solution requires that you already know the spell. That's not how the game works. You are assuming a save file with a few hundred hours in it, where you have collected every spell. The macro list will only offer spells that you have spell gems for. In practice, you'll get access to scores of ethereal spells long before you know them. And by "long before", I mean a few hundred hours. Try starting a game, say as a warden, and trying it. It can't be done.
