Confused on the fusion system, right after I fuse the monster has both perks?
or do you have to choose which one you want to use or get a item? can anyone explain? loving the game so far!

The resulting creature will have both parents' traits.

Yes, there's no reason to use a non-fused creature - fused will always be better since they have an extra trait.

Another thing to note with Fusion, the secondary creature will be the Fused Creature's affinity.

IE: Life + Death fused = Death creature, because Death affinity was the affinity of creature #2

Chaos + Sorcery = Sorcery
Life + Nature = Nature

Important to note for your spell gem qualifications.

also stats are averaged (including experiance), carefull if you a fusing something to be a tank, and you fuse it to a glass cannon, you end up with something tougher than glass, but still not really tanky.

I would not say "always." I would instead say "always eventually". You want to first unlock the best fit with which to fuse. Fusing too early will only leave you starting over with a new combo and losing all that early experience grinded on the one no longer desired.

As far as I know there is no way to unfuse them and you cannot breed again a creature who has already been fused.

The fusion guy lets you spend energy (trivial cost) to level a creature to the highest you have attained.
