As for scrolls, they're slow to get, and not really worth the effort. The stat bonus is less important than the traits on your team when you reach the end game. I don't recommend worrying about them, as a good build makes those stats mostly irrelevant.
The only reason to need reverse fusions is if you made a mistake with something super rare. However, due to the cloud saving system, even that is easy to avoid. You can backup your save, experiment with fusing rare things, test out the build, and if it doesn't work out, you can roll back your save.
There's also the fact that fused creatures don't save all the data of the creature you fused to, such as scrolls used and personality, so if you unfused a creature, you would have to reroll that info, or copy it from the personality of the first creature in the fusion, or in the case of scrolls, just lose out on scrolls used.
The first two options are both exploitable. Power is the only resource used, and you get far more than you need as it is, making this essentially free. Being able to reroll the data randomly means if you don't like the initial summon, you don't need to do anything to get another shot at it, until you get the exact setup you want. Copying the data means you can essentially save a few creatures for the sole purpose of choosing the exact personality and/or stat scrolls you want to copy to a new summon, and free stat scrolls is takes them from something you have to work toward, to something that's way too easy to get in unlimited quantities. It's too exploitable to add with the current system, and a significant overhaul in how data is stored would be required just to add the feature back, meanwhile an answer to the potential problem of "I changed my mind" or "that didn't work as well as I thought it would" is already available. I'm not sure it'd be worth it to add.
