EXACTLY! It's poorly designed for solo.
As for the projectiles, only one projectile can be a critical at a time. You need to pay attention to the critical shot as it's airborne and focus on the rest of what's going on in the water or on the deck AFTERWARDS. Also I don't know if this is obvious or not but you should have a set of maxed-out Sentry Cannons before attempting lighthouse solo. If you're solo I would recommend Krillstoph for better shipdeck management because you get double damage and one less hit to knock back enemies or Shelbie for better turret damage and fire rate, whichever suits you. If you're having trouble moving across the ship fast enough to catch projectiles, remember that dodge rolling moves you faster than walking. First boss is very easy and you really only need a piercing shot or a vegetable that has the shot-bounce ability to hit multiple tentacles to keep them at bay. I wouldn't even worry about moving both cannons to one side when the Maw appears, just load the one cannon facing the mouth and worry about the guys that get tossed on deck. In the case of the second boss, you only need to worry about smacking the large claw that smacks the ship and then reflecting or putting out the long range claw's attacks. It's not the end of the world if the shots from the claw land on the ship you have a generous amount of time to put them out as boss attacks will never shoot a critical shot. In the 2nd stage of the fight keep both cannons situated low towards the claws and away from the giant crab head. If you have a freezing ammunition type of any kind, it makes the fight MUCH easier as you can disable one or both claws as they emerge out of the water. Not hard. 3rd Boss is pretty easy you just have to remember that when the skeleton bird enemies die they lob a projectile, the first of which will always be a critical hit. But I think the regular fight against the serpents is manageable just remember to avoid that knockout beam at all costs or you will lose. Even if the projectiles are going to damage your ship, just focus on rolling through the knockout beam the left head shoots. AT NO POINT DURING ANY BOSS FIGHT WILL YOU NEED TO OPERATE THE CANNONS MANUALLY.
Just keep them loaded and focus on the deck!

Really it just took understanding how the final boss worked though. Auto-cannons on each side help a lot with the tendrils, but you have to be on the ball about paddling them away when they get close to the ship. When the mouth opens up, you need to get both cannons on that side of the ship, but focus on killing the slugs fast so they don't damage you. Rinse and repeat.

Is it POSSIBLE to do solo? yes, yes it is
It it balanced towards solo? I'd say no, it is not.... from my experience it is SIGNIFICANTLY harder to play this game solo and doesn't seem to be the intended experience either
There are some upgrades with the cannons and the auto that can lighten the stress... but this impact is low at best. For winning solo you must rely on specifically power build and strategies, for duo play you can carry the win with much much less
For that you should abuse the system as much as possible (duplicating/triplicating the op items like crit and guaranteed effects) so you can become a powerhouse
