It's only WvW where your server has any impact on the game.
For example, there are ones that specialize in Farms. Others may specialize in Raids or Fractals. Since you can be in up to 5 guilds at a time, it is best to be in multiple guilds that have their own specialization.
Also, take your time and don't rush into guilds. There are plenty to choose from, so don't feel the need to rush into one.
In WvW it is not a must to play pvp, you can also simply kill the monsters, the guards of the computer like in pve.
In WvW you will often find big bus (groups of many players together) following a commander (a colored shield)
Most of the time most of the players of these big bus are in the same guild and will offer you to join.
You can be in 5 guilds at the same time.
