I helped a dude get one of the mastery points few days ago in desert highlands . Its the one for which you need jackal portals .
Since he just tp to me he skipped all the cool sand trails in the sky .
And he probably wont ever go and see them unless a ascended weapon elite spec colection brings him back there .
So a whole cool little part of the game world that he wont get to see or experience .
Yes you can skip the Griff until you feel like you can throw extra funds at it .
Just like any other thing you dont need to rush . Take your time . Get your bearings and find things that are fun . After that go for any and all extra bits you like .
For instance I play ranked pvp each day . At least 1-2 games .
For me the pvp Legendary backpack , amulet and all 3 armors were not a chore ,grind or a hard thing to do.
I was already doing that bit of content for my daily's , reward tracks , skins and fun .
For my friend who mainly just raids amulet and backpack were torture .
I get that people want the shiny .
Its like that even with single player games .
But the difference is in multiplayer ones there are usually 0 ways for people to skip the effort and get the shiny thing .
Sure there are skins in gem store but they dont mean the same thing as stuff you have to put in some effort .
And Y i get that we are talking about a mount and its approachability to average joe and not optional weapon thing . All of the players can make use of a mount , specific legendary weapons not so much .
Still for me it was not the hardest thing ever . Nor do I have any data on % of players who have the living world episode and decided it was worth the effort vs nop.
Best I can do is lend a helping hand or give any info I have . Rest is up to Anet to balance out .

If you find the collections not especially fun, you likely won't enjoy the game.
As for flying.... Skyscale is a helicopter, Griffon is a jet plane.
As for distance, it's variable. Over a short distance, Skyscale actually increases in height. Over a mid distance, Skyscale is usually better. Over an long distance, Griffon loses less height.
And, from a high location, Griffon loses no height at all no matter how long you fly as long as you don't crash into anything.
