Some highlights
End of Dragons: Turtle mount, skiffs/fishing, EoD elite specs, jade bot
Secrets of the Obscure: Weapons no longer tied to elite specs, Easier skyscale unlock path with new masteries, new legendary armor that can be unlocked (grinded) from rift hunting
Janthir Wilds: The new updated warclaw, homesteads (housing), Spears
You are also missing out on strike missions from those expansions and such
But remember, there's no gear treadmill in Guild Wars 2
So you won't fall behind if you don't have it
I would say it's more the features that are the highlight
But if you are a big fan of doing strikes, that might be a reason in itself
Depends on who you ask
The expansions are very nice to have, but if you still have content to do, it's not like there's any rush
End of Dragons comes with the Elite Specialisation, Jade bot, Skiff and Fishing. Out of the 3 EoD is akin to HoT and PoF in terms of expansion content and size (though it has it's faults)
SotO comes with Weapon mastery (allows class to equip weapons from their other Elite specs) and new type of weapon for each class. Faster way to unlock skyscale mount, adds new skill, also effects griffon flight.
There are also exclusive relics and the wizard vault allows you to get a choice of legendary starter kit. (From what I gather is the weakest expansion for various reasons).
Wild of Janthir which is the lateest comes with Homestead (player housing).
Land Spears and update to the Warclaw mount. I believe like SotO it will be updated in three parts.
I would wait for the other 2 to go on sale.
It made Warclaw pretty much the best (land)Mount in the game right now and would unlock the Wiz'vault fully.
Black Friday/Halloween sales have a good chance of putting the LW Stories on sales too,
so stocking up on Gems would be a smart move.

Yep, they always put them on sale during the big Steam sales. It says that Steam Autumn sale starts on November 27th so that's when you can expect all the big sales for GW2, and it's definitely worth it because they tend to give juicy discounts
But as many others said, just expect that the new expansion Janthir Wilds won't be on sale so soon since it just came out 2ish weeks ago
