You only have to download from one platform, its the same game with the same files. The only difference is the platform you are playing it on. Keep in mind, that even if you use the -provider Portal trick you are still subject to only use any payment options tied to the platform you decide to play on.
Steam download = can only use Steam account for purchases
Anet download = can only use Anet account for purchases
If you are in Windows, it's practically useless. Just copy the "gw2.dat" from your regular installation to the Steam GW2 folder, then uninstall the regular one.
But, if you are in Linux, symlinking is a good option, because then if Steam Linux isn't working as it should be for GW2, you can, for example, launch the game regularly via WINE/Lutrix/PlayOnLinux and see if it works.
