mecanist is currently OP. But my best guest would be to take some time to play the three of them and look which one you prefer.
Personnally I used to be a fan of elementalist. But now i'm really into Necromancer.
My best bet is. Do what you like. playing the meta sure will allow you to be powerful. but finding the gameplay you want is the best way to start.
Hope you have fun and if you have any question there will always be a guild wars player ready to answer. Most of Us love seeing new faces.
But in the end you might want to try them all out and see which one you like . If you enter the pvp lobby you can test out the builds and use a vide set of gear on any of the targets Stationary golems , moving targets even npcs that represent other classes .
Low intensity builds with max 20 clicks a minute and up to 30-40k dps parse.
