Way to Change Victory Conditions?

I hate that at a certain point, I just win the game, instead of controlling the whole map.

You need to edit Tweaks.txt located in the "data" folder of Legion Gold. There're two parameters there that affect the victory conditions: "WinPercentage" and "WinClearPercentage". Set them to "100", and the game will only be won if you control the whole map.
