If you do the bright woods DLC, you can get some much better mole-resistant armor.

Start by slicing off as much of his health as you can with ranged (I suggest blaster for quick shots discharge). Then block, block and block again. He leaves VERY narrow openings, even when you stagger him after a yellow attack he'll recover super fast, you won't have time to land a full combo. You gotta play defensive and poke him a little here and there when you get a chance. Also, as always, poison will be helpful to drain his health faster.
