Roguelikes I can probably recommend; Loop Hero (obv since this is the forums lol); RoR2 (If you have friends or like 100%ing collections); Curse of the dead gods isn't too bad, but it's a bit repetitive ngl; If you count it and don't already have it The Bind of Isaac even tho it's more bullet hell, It's replayability is really high since it offers alot of really cool builds / upgrades; Slay the spire.. Now out of every game here, slay the spire is my most played personally. I like everything about it between the different characters, the items, the synergy, THE MODS!! Jesus the mods are god tier... Great game overall as long as you don't mind turn based card gameplay; I've played noita for a few hours and I couldn't really understand it, but it was quite fun since it was new and pretty interesting; Enter the Gungeon another primary bullet hell game, but it's similar to BoIsaac but with guns (Obv. these 2 are wide known but always state it just incase); Hero Siege is a pretty fun game to play, alot of progression, its a live service and its got a playerbase It's a mix of roguelike, rpg and bullet hell; Stoneshard i've also played a few hours on, its a older feeling game but it gives a good atmosphere and sense of difficulty and some story. With replayability I can't confirm too much since I didn't play it too long, but it seemed like there was alot going on there; Barony is really good if you like RPGs and like the roguelike aspects, its actually a really fun game, I only have 10-20 hours on it myself but thats bc I had / have no one to experience it with its a up to 4 player game I believe, its very RPGish it's really fun and decent gameplay gives alot of immersion even tho the graphics aren't the best.
I didn't mention Hades because I personally thought it was just really overhyped for what it was. People said it was something great and new and mindblowing and in reality it was just a simple hack and slash kinda game that was really repetitive IMO.
The one in this list that will probably have the most replayability and interest to general people is RoR2 due to it being very active and the builds are just disgusting always makes you feel pretty good, theres secrets, currency, multiple characters, an endless # of waves.. etc. But the others cater to more specific tastes probably.
And just to clarify, a Roguelite is similar to a Rogue-like except there is a aspect of progression between runs. You'll be hard pressed to find a game that is pure Rogue-like but there are certainly some that have more progression than others.
In addition to what others have recommended;
Faster Than Light: Space-faring rogue-like that is a mixture of resource management and strategy. The various random events, different starting ship loadouts, and variety of ship addons and weapons increases the lifespan immensely.
Spelunky (1 & 2): I hope you like dying. These two games are tough as nails platformer rogue-likes with plenty of hidden secrets and paths leading to extra endings to keep a person occupied discovering them all.
Undermine: Roguelite top-down hack and slash that certainly was influenced greatly by Binding of Isaac (another good Roguelite). A sort of new game + gamemode at the end extends the lifespan of the game.
Dead Cells: Roguelite platformer with a hell of a difficulty curve. The weapons are interesting and diverse so you'll naturally find out what your preferred weapons and powers are. As you clear the game you unlock extra levels of difficulty that fundamentally change the enemies that appear, the zones that you can access, and which bosses you can get to (you can't even fight the true final boss unless you're at the maximum difficulty).
It is still in early access, though. Plus it's a lot more fun playing it co-op rather than single player.

But for actual honest-to-god roguelikes, I'd recommend Noita and Nuclear Throne. edit: which, honestly, aren't really roguelikes either. Maybe roguelites?

A roguelike means that you start completely from scratch every time.
A roguelite means that there's some type of meta-progress between runs.
Editing this for good measure. If you're too lazy to google, roguelike basically is a pointsystem of how closely it resembles "Rogue" the original rogue game. Roguelite is reserved for games that aren't even remotely close to it but harbor enough common traits to be considered influenced by other roguelikes and Rogue. Anything beyond that is just the gamer community making ♥♥♥♥ up, passing it along via forums, twitch, youtube and other communities to thus be regurgitated out as actual info by other misinformed individuals. This misinformation is so prevalent that popular gaming sites even get it wrong and spread it themselves. Just googling roguelike and roguelite brings up crap like gamasutra getting it wrong.
This is roguelite and just barely.
ADOM (not Ultimate ADOM) is one of the classics but has become much more accessible (massive updates, beautiful pixel art, better UI).
DCSS is perfectly balanced IMHO and falls into the category ' Easy to learn, hard to master". It's also open-source.
Others have already mentioned 'Monster Train', 'Hades' and 'Dead Cells'. I can only second that! Those games mix different genres with the concept of roguelikes in a very clever way.
You can also check out 'Jupiter Hell' which deserves more attention! It's basicly a rogue-like inside the doom-universe.
EDIT: I forgot to mention 'FTL' (Faster Than Light). This game is really(!!) addictive
