If you place too many things or make it too hard for the Hero, he will die. If you make it too easy for him, then he probably won't be strong enough to kill the Boss and die anyway. So you need to try and find a way to make the Hero strong enough to kill the Boss.
Spiders are a good source of more cards, which help you progress faster in pretty much every way, and vampires are a good source of equipment which help you survive all the fights you're adding to the loop. Combining the two are also good for a valuable camp resource over time.
To really use Doom as an example, the question might better be, "Why shouldn't I just sneak through the level, killing as few enemies as possible?" to which the answer is, "Because you're going to need to find better weapons in the level, the pistol isn't enough to kill most bosses."
Some resources you need to gather require certain fights. For instance for one resource, you need to kill 5 enemies in one battle. This generally requires a vampire to join the fight.
