The game put's you into your region. Let's say ASIA as an example.
There's 4 server nodes in Asia. Japan, Korea, Hong Kong and Singapore. You are able to select your preferred server by default but IF the server you chose lack players, you'll be queued to the other 3 NODES in that region under ASIA so you'll get high ping than usual.
You cannot choose what server you'll get picked entirely. You're stuck with this nodes under your region this means you'll have to play even up to 150+ ms. Use Gaming VPN if you have to.
Since your region is AMERICA that's NORTH and SOUTH AMERICA included. This goes the same for EUROPE with Germany/Russia/UK etc..
You said spike though as in 80-100 IN a match so this is mostly a connection issue. Enable Server Refresh Rate & Packet Loss Rate to figure out if you have any connection issue to any of the server that's causing this hiccups.
Settings > Screen > Server Refresh Rate & Packet Loss Rate = ON
