Not saying it isn't a hard boss,w e struggled mightily, but spend a few fights learning the moves instead of trying to beat him and you will see it's actually not nearly as intimidating as it looks.
Mist step (Ring of Omen + one of "Omen" amulet) could work.
The rest is observe the boss animation and dodge into it's wave attack like hitting a moving note in piano/music games.
Even myself who experienced at dodging through big swing attacks from other games still took me 15 tries to beat the final boss for first time in Veteran difficulty.
The Phase 2 mechanic of swapping arenas and forms is the most distracting, disorienting thing I've ever seen in a game. It's very cinematic but incredibly jarring. The fight would be hard enough without it but noooo the developers though it would be a great idea to incorporate sensory overload too.
*cough* Anyway......
The way I beat this fight on Apocalypse at max level was by stacking shields and using dots+turret to DPS the boss while dodging. Shielded Heart + Medic shield for a total of 300% effective HP should put you out of OHKO range for all of the boss's attacks except for the orbs.
You can increase your EHP further by boosting your base HP via traits and using relic fragments for HP and shield effectiveness. Combine that with lowering your skill cooldowns as much as possible(Legacy protocol + rings of your choice) and you can reduce the cooldown of the medic's shield to almost nothing. Then you're free to just shield spam your way to victory. Your main class can be pretty much whatever. I like engineer since the turret can DPS the boss while you're dodging its attacks.
The only other requirement to make this build work is some source of passive healing so you can top yourself off while you're shielded since Shielded Heart doesn't actually heal you. I found Regrowth + Syphoner + Soul Link (ring) to be enough (assuming you're running engineer). You could probably swap "Soul Link" for "Generating Band" if you're not using the turret as that ring provides pretty strong HP regen while shielded.
It was already mentioned once but its worth repeating: enigma is THE way to kill the orbs on that fight. It's a very easy, nearly foolproof way to deal with the boss's most damaging attack.
I don't think I ever beat that boss in coop though. The last thing that boss needs is more HP to chew through.
