How do you get new weapons?

The bosses only ever seem to drop mods or mutators, still using the main weapon I started the game with because nothing ever gives me anything better.

You mostly find them, sometimes you craft them from boss materials.

Some bosses (mostly world bosses) give you materials that can be used to make new weapons.
Some weapons are found behind hidden/locked doors, at the end of puzzles or by completing certain events.
And some weapons are unlocked if you complete the campaign on certain difficulties

Im at the final area I think. Some big ♥♥♥♥♥♥ digital dragon that kicks my ass constantly and throught out the entire campaign Ive done every optional dungeon I could, went in every secret I could figure out and all mccabe ever wants to make is just mods and a handful of melee weapons. Are all the long guns just mega hidden or am I unlucky?

Just unlucky it seems. There are plenty of hidden weapons that you might have missed, or not even had the opportunity to acquire due to the RNG nature of the game. Some alternate boss kills can result in different weapons, too, which might require knowledge from watching videos or a fair amount of experimentation on your part.

There's like 50+ guns to acquire, though.

And btw, you craft the weapons at the mod girl or buy some from firing range dude ( i dont remember his name but he sell starter weapons, and also difficulty reward weapons.)

Heavly depends which bosses and side dungeons you had. Also keep in mind that Bosses have Alternate Kills which yields different loot. In Case of World Bosses its usually 1 Gun and 1 Melee Weapon depending on the kill you do.

They're well hidden, and maybe you just didn't get the dungeons/puzzles/events that reward them.

One thing that can help though, if you beat that dragon, you get something that helps you find hidden stuff.
