Ninja Gaiden is not even a Soulslike.

just about might as well be lol...er the 3rd one maybe was it?
I quit one of them & never looked back....it did have something akin to a SL system. The 1 where his arm is all possessed.

Jedi games are closer to sekiro or a metroidvania.

Depends on what you consider "easy mode", but I would say this game, even in a survival focused build and on easy difficulty will be rather challenging. There's much harder games like Wo Long or Elden Ring imo, but the only game in your list I've played was Fallen Order and I consider it to be easier than Remnant 2 in general. Bosses can get pretty demanding and some mobs are designed to overwhelm you if you're not careful and stay on your toes.

It's a good game and you'd enjoy it if you don't mind trying something spicier, but maybe Asterigos would be more along the lines of what you're used to.

Yup the Jedi games are good games not at all harmed by the presence of easier modes.
But you'll still need to be good at maneuvering the environment regardless of mode.

Jedi Survivor is only Sekiro level when you ramp up the difficulty. Other than that silly toad boss that is just awful to fight.

While this game have 4 difficulty modes, the first one will still pose a challenge on the first run. The boss in Lonsoom(Aka London area) with 2 phases is actually pretty hard with the limited health flask.

There is something different about Dark Souls games I do not think that Remnant 2 or any of the games mentioned are like it.Its just a tag to put on games to sell them

Leaving apart whether a game might be a soul like or not, remnant 2 has the survivor mode which is pretty easy for the solo xperience.

If the game runs smoothly on your machine, I'd definitely give it a shot!

Popular definition of a "soulslike" tends to be:

- third person action game
- designed to be challenging
- limited, restockable heals
- checkpointed progression
- dodge roll.

Fallen Order fits that description, as does Kena from what I can read. Ninja gaiden is a tougher sell, but it's a series of famously difficult third person action games so OP was probably trying to paint a better picture of what he's looking for given that he's got limited experience in the genre.

Soulslikes tend to have all or most of these:
Action RPGs
Custom Builds
Heals restock at checkpoints
Enemies Respawn when you use a check point
XP doubles as currency and drops on death, with one chance to retrieve it
single player and multiplayer are tied together in various ways
tough-but-fair design philosophy
