With some practice you will start to learn good combat flow and overcome your challenges. This is when the game starts to really shine and become fun.
So don't look at dying as you're not being "gud."
See it as the opportunity it really is.

There are no mods currently that make the game easier, only harder. Game isn't that hard though especially on survivor
Did he asked for your point of view? If he wants to find a mod to experience the story, hes allowed to do that. Hes interested in other things than combat and he said that pretty clearly.

To familliarise with the game (especially certain bosses) i went full tank+regen and only tried to dodge on survivor difficulty with low level and didnt attack the boss unless i wanted them to change phases.
Hunter : The most default-ish class & gameplay since Remnant 1
Medic : LMG might bit difficult to use because you need to keep shooting and it has low stagger so enemies still gonna swarm you.
Challenger : Might be one of better option because, it has free self-revive so you can keep trying using dodge even if you fail alot because the more you fail, the more you learn. It's drum-mag shotgun also great to spray at enemies.
Handler: Probably the best option because doggo can take aggro. Also it has well balance assault rifle.
I had my mom play mario kart 8 once, and she was really struggling. It honestly clicked why the auto-steering mechanic was added, for players like her!
So cheat, use whatever exploits. People deserve to ENJOY games first and foremost. Screw all else. And if you don't need to cheat, then don't. I won't, but I encourage you do if you need as much.
The problem is that there are sanctamonious people who act like that's okay, and insist that other players who are not on board with it should just accept it.
