A word of advice: if you get it, I recommend disabling the "Deluxe Edition Items" DLC. It gives you 3 sets of armors from the start, that you would normally need to beat the game first in order to obtain them. So it can be a bit of a spoiler.
The Ultimate EDITION contains Remnant 2 and DLCs 1, 2 and 3 (which is currently all of them).
The Ultimate BUNDLE includes Remnant 1 + Remnant 2 and all DLCs for both games.
if you already own or don't care about playing Remnant 1, then you should buy the Ultimate EDITION and NOT the Ultimate BUNDLE.
You get them earlier, sure, but they're not connecting to some plot point or anything.
I'm personally not a fan of "early unlocks" for that reason, to the point where I was seriously considering NOT to purchase the Ultimate Edition at launch. Heck, I actually refrained from using the Gunslinger archetype until I unlocked it the normal way.
I get that's not how everyone might feel about it, but that's my take.
