The biggest difference between Remnant 2 and Dark Souls is that this game is designed around shooting things. Some enemies and bosses fly, so melee is not always an option.
If you like Dark Souls and Third Person shooters then you'll probably enjoy this game too. At it's core Remnant 2 is a tough third person shooter with a good amount of RPG mechanics behind the shooting. It's a good time if you like tight shooting and buildcrafting.
I will also recommend that you use the game's discord (or another service of your choice) to form a group. There are no restrictions on what kinds of players can join your game, so you may get some high level person who just rushes straight to the boss which ruins the experience. There is also no text chat or in-game voice chat either.

I am a person that hates dodging (I rush in and go full offense and try to kill enemies before they can hit me) in all games where it's possible and I normally hate boss-battles.
So I love hack-and-slash games like Diablo and similar games
But Remnant 1 I actually enjoyed cause of the puzzles and exploring, there's less exploring in this game so far but I'm still enjoying it.

In all seriousness, if what you want is play Dark Souls in co-op, just get Dark Souls Remastered.
Still, you should get Remnant 1 and if you like it and did beat it, get the sequel.
IMO Remnant is more like Warframe than Dark Souls.
