For the coffins, kick all 5, look around for a Space Ship in a giant hole. That should be hint enough.
I've heard people say you should be able to lower the water again by interacting with the console again, but it's bugged and won't allow it. I think they're just in denial that it's working as intended. With the way the game is built, performing multiple runs to acquire everything seems far more likely to me.
And as for the coffins, there should be a structure on the map that has a dungeon in it. Reaching the end of the dungeon, there is a power source that you interact with and push back into place, allowing you to interact with a console back outside the dungeon. After doing so, any of those coffins that you kicked will be retrieved and brought to the structure. You'll then find several rewards in the retrieved coffins, including a ring, an amulet, and a handgun.
But for this adventure those are permanently missed right? Id have to reroll to have another chance?
Also for the coffins, I read something about it but someone said that they activated something before the coffins worked?

Unless you find the same event in another dungeon in the adventure. You got your instructions for the power core :)
By default, your save files are in this folder.
C:\Users\<Your Windows User Name>\Saved Games\Remnant2\Steam\<Your Steam Numerical ID>\
There are 2 types of save files - world-state save and characters save.
Characters Save
profile.sav is the save file for all of your characters.
World-state Save
save_0.sav is the world-state save file for the 1st character.
save_1.sav is the world-state for the 2nd character.
save_2.sav is for the 3rd character, and so on.
At different time points, the game automatically creates a backup for each character's world (up to 3 backups).
For example, the auto-backups of the 1st character's world:
save_0.bak1
save_0.bak2
save_0.bak3
Auto-backups of the 2nd character's world:
save_1.bak1
save_1.bak2
save_1.bak3
Auto-backups of the 3rd character's world:
save_2.bak1
save_2.bak2
save_2.bak3
So, by assuming that the character in your case is your 1st character, do the following.
1) Either quit the game, or don't quit the game but instead go to the title screen.
2) Back up the entire save file folder in case of mistakes.
3) Go into the save file folder to delete the 1st character's world (save_0.sav).
4) Replace the deleted world-state save with an older world-state save by renaming a recent backup world-state save file (save_0.bak1 or save_0.bak2 or save_0.bak3) to save_0.sav.
5) Launch the game with the 1st character to see whether that auto-saved backup is the one you want. If not, repeat the steps with an even older backup.
BTW, the game saves (both the world-state save and characters save) when you touch a world stone/shard, or when you use a golden wall to load into another area, or when you go back to the title screen. That is, since characters (profile.sav) and worlds (save_*.sav) are saved as separate files, for bosses/dungeons with multiple outcomes, you can trigger the saving process, and then manually back up the world-state save file for the purpose of doing multiple outcomes, instead of the standard but more time-consuming method of rerolling the world.
By inference, you can exchange characters' worlds. For example, copy and rename save_0.sav to save_1.sav and then your 2nd character's world will be replace by your 1st character's world. In other words, a world-state save can be used by any character by renaming the world-state save file with the right index number. Example: save at the world stone of Ravager's Lair before the Ravager boss fight, so as for any characters (of yours or other people's) to reuse that world-state save file for all 4 outcomes (and also the other rewards - exp, scrap, a tome of knowledge, lumenite crystals, and 3 chests) So, if you wanna farm, then simply repeatedly kill the Doe (requiring only 1 hit) by restoring the world-state save file.
