I think the biggest problem is that killing an enemy will trigger enemies to spawn around you.
If you are alone you will get flanked, it's even worse because elite can spawns and they 1shot sometimes.
Bosses are not so bad but they were not design for a single player
The ghost lady in the hospital can take you from full to zero if you are too close to a wall or if she lands a certain attack on you (I think after you've reduced phase 2 to <50%) where she pins you to the ground and sucks your soul out.
I assume those mechanics are the same in solo as they are in multi so there are two one-shot mechanics like the OP mentioned.
Okay, well, I understand instances where that can happen in these types of games. Doesn't make it impossible for single player though.
Yeah I mean Remnant 1 had complaints about lots of adds, but It was also a game you could solo. Some bosses were just hard.
I recommend playing the Handler if this bothers you. The doggo can get some aggro and act as a tank.
