Most of the enemies are melee-oriented, and unless you exclusively decide to be melee-based as well (or at least the Challenger Archetype, which is rewarded for doing melee), you'll be using guns to kite and shoot. This means, that as long are your aware of enemy placement, your probably not going to get hit.
However, this doesn't mean the game is easy. If an enemy does manage to hit you, damage is justifiably high, because of how easy it is to maneuver. The weight system for armor is a big strict, so you'll want to stick to Medium rolls, although Light rolls is best, but this means your armor will be bad, so there is some decent trade offs.
Death isn't punishing at all: just means your thrown back to the last "bonfire", with no corpse runs, although this means you'll still have to fight through a level, which is fine, cause you'll need the experience and resources to adapt to other playstyles, experiment, etc.
Compared to the Dark Souls series, the Boss battles in Remnant 2 are actually quite fun. Dark Souls definitely has it's share of interesting Bosses, but most of them boil down to "I'm a beefy fast melee guy", whereas Remnant 2 has enemies that ooze through walls, shower the screen with area attacks as a small phase, etc. However, Boss fights tend to be relatively short by comparison, usually about 2 minutes or less. There are a TON of Bosses in the game though, and because of how unique each playthrough is with random worlds, you may run into new Bosses and environments all the time.
The thing that surprised me most about the game, was the Roleplaying elements. The story itself is kind of bare bones and meh, BUT they made up for this with ridiculous levels of detail in the side stuff and story quests specific to each "world" you visit. You get to talk to a lot of Bosses before fighting them, and can even side with them, if your willing to be evil (although some bosses aren't evil, just in the way of what you were initially doing and have a different opinion on what your trying to accomplish for someone else). This is a game thick with Lore and conversation, if your interested in that stuff. Of coarse, you can just ignore all that and pew pew, if you want.
My only real complaint about the game atm, is performance issues. My GTX 2060 doesn't quite run the game amazing, as I do get 60 FPS, but the game constantly stutters, making certain parts of the game much harder than intended. However, the developer has been very transparent with us, and is promising to fix that.
Also, despite the game not being "officially" out a week yet, they made a Reddit post yesterday, claiming that Quality of Life changes are on the way. This means that unlocking certain Classes and weapons will be less tedious, and the game will be more focused on fun. As someone whose an older gamer too (if you can consider turning 39 this year to be old), I'd strongly recommend Remnant 2, if your fan of shooters and RPG's.
I'd love to try Hardcore for the rewards, but the game's performance is so erradic for me atm, that I could barely get to the first save point, do to all the freezes during battles.
No, especially since you can play it on easy.
But many of the bosses are (imo) harder, but not quite to the level of the worst Souls bosses, atleast on the earlier difficulties.
It's more accessible than Dark Souls 1-3, but harder than Elden Ring.
In terms of difficulty, I found remnant harder because you have to aim weakspots, but greatly I enjoyed both souls and remnants.
