Using Carrier Aircraft for carriers in custom battles
I would love it if the developers would let us use the aircraft that the carriers are carrying>

That is indeed the idea.
You place all sea and air assets into the battle and have at it.

In campaigns, launching aircraft prior to entering combat achieves the same thing.
