I get around that by installing a Gyroscopic Rotation Assist Bar.

Using a small electric motor and a 5 bar you can use gyroscopic motion to force your car to turn more. Just remap the electric motors controls to A and D (or D and A). Bar length depends on the weight of your car. If you got a chonker you'll need a 7 or 9 bar. Feather weight? 3 or 5.
So that's why my car doesn't turn nearly as sharply as it used to, they implemented a limiter to make the game more realistic.

I'm thinking lately that weight distribution might be the real key. Like you want your wheels to have as much leverage as possible for spinning the car's mass. So as much as you can, you want to centralize the car's mass right in the middle of all your tires to give them the longest lever possible. Stacking two of them vertically right in the middle might be a good start.
