And I replace those lower rank genes with better ones which makes them just as good as the higher rank monsties since they are not getting one shot in a failed HtH. If anything I would say it's the gear/weapons that need to get upgraded (which you can do in post) that I noticed the bigger difference.
Only other thing I will say about higher star rating monsties is their do have some of the better area skills and double which you will need to busted the bigger rocks and so you can have a better set of options.
Plus the appearances of the higher ranks monsties, some are rather interesting, so yeah I want a couple due to how they look and slightly better stats.
So just flat out, a higher star rating is better than a lower star rating stat wise?
Doing the same too, some of my favourite monsters are low ranks like the Tigrex.
Even though I have a good Brute one I'm keeping the original because I just like it better xD
Hell I'm still using an Azuros and a Paulumu because I like them as well.
With enough time and effort put into optimizing a monster's genes, pretty much ANY monster you want can be made strong enough to handle High Rank content, including the 5 Elder Dragons, and the various "deviant" versions of monsters (like Dreadqueen Rathian or Pink Rathian). Seriously, if you really wanted to do so, you could even turn Ranmar (your starting Velocidrome that Kayla gives to you in the very beginning of the game) or your Kulu-Ya-Ku (the first monster you ever hatch from an egg) into a totally viable monster for High Rank Dens & expeditions. Elder Dragons and Deviants simply are viable for it more or less "out of the box" (or egg, in this case!), or at worst only require a much smaller amount of gene-tweaking and preparation (I was able to turn my first Elder Dragon after Nergigante, that being Velkhana, into quite the powerhouse almost immediately as I had plenty of good Ice genes to give to Velkhana just sitting in my monster storage....the same was also true when I wound up getting my first Kirin, I had plenty of good Thunder genes just sitting around to give to him), while other monsters require a bit of fine-tuning and time investment to get them the sets of genes that you want on them. About the only "farming" required once you have the Elder Dragons would be to obtain at least 4 more of them in order to max the rank of their "signature" genes (such as Velkhana's Icicle skill).
the elders/deviants you can farm are just better then everything you get before, not only the genes, they have much higher stats.

At level 20, there is easily a 25 ~ 50 hp difference between a 2 star monster and a 4 to 5 star monster. If you go to your Field Guide and then check the Monstipedia, there is a chart of the base stats. The difference is easy to see.
