That could be balance as much as rushing. There's already some redundancy in the monsters you can ride. Cosmetically it makes sense - everyone has their favourites - but gameplay wise if it doesn't do something different or unique, why bother adding it? The Yian Kut Ku is a good example - given you can get the blue variant about five minutes after you get the regular, and the variant pretty much does the same thing but has slightly better stats, is anyone really going to use the regular version?
Part of that is just because they look to be dynamically generated from a set number of rooms. More of those room types would definitely help, or just have some unique ones to each biome - I think the lack of variety tends to become much more noticeable once you start recognising they're using the same rooms, just with a beach/forest/snow/lava texture.
I'm not sure how much of it is rushed development versus paring things back to fit on the Switch. Your house is a good example - it's the exact same room whether you're in the starting tropical beach village or chapter 3's snowy village, which makes no sense (why is your bed a boat at the top of a mountain?). That could be cut corners to speed up development, but it could equally just be re-using assets to cut down on game size. Given they're unlikely to separate development between the two platforms I suspect we'll never really know (though it does make me somewhat happier about the year long wait for Rise on PC).
Because numbers 111 to 210 are missing or hidden (or what ever numbers they are)
They done this before to help spread out content and not let players rush through it and be bored, it worked well for MHW to bring ppl back every so often
Most of them are kind of a mess.
Absolutely. A lot of Rise's updates felt like content that should have been in the base game. Stories 2 at least feels finished, and the content that's announced is just extras. Heck, Stories 2 had elder dragons at launch, whereas Rise did not beyond the final boss. :P
Also I just realized Arjanath joining in a battle was exactly used once for the story.
