pCARS and pCARS2 include the real deal. Real pit stops, with an animated pit crew, etc., etc. I have only read about it and can't tell you much, but I recommend the pCARS games for the no holds barred video game sim racing you're talking about.
Dang, I have over 250 hours in this game and I never knew you could change the time scale in race day.. But then again, I never messed with race day too much, I had even forgotten it existed since I haven't played in 6+ months.
