Clearing save data for fresh start

I want to replay the game but I can't find a way to clear my 100 percented save data so I can go through the chapter/ending unlocks and name tag collecting again. I've tried deleting my save data and disabling cloud saves but it either doesn't work or bricks the game. Any help would be appreciated

So :
- I turned off the cloud save for the game
- I uninstalled the game
- I deleted both 1273260 and 251270 folders in userdata
- I deleted the main game folder in steamapps
- I put steam offline and unpplugged my internet
- Launched the game (which did not crash this time), skipped the intro, made a quicksave.

The game created a brand new save (the cpsystem.bin one) in the 251270 folder. Of course, make a backup first, before deleting that folder. I hope it'll work for you too !
