Do the rest of the games work from Blood Covered or Repeat Fear?

Trying to consolidate all my corpse party games onto one platform and im wondering if I should get The 2016 or 2021 version to start with?

The naming scheme of the series is a little weird. Blood Covered was originally the name of the old PC version, which became available on Steam in 2016. While Blood Covered Repeated Fear refers to the updated version which was originally released on PSP and which every future port is based on, including the 2021 version on Steam and PS4/Xbox. Story and gameplay wise they're both identical, but Repeated Fear came with updated artwork, full voice acting and more extra chapters
The 2021 version is essentially a port of the PSP/3DS, which makes the original PC version pretty much obsolete,but it's a nice history piece to compare it to the Repeated Fear version

Tldr: Get the 2021 version. Both games are 100% the same gameplay and story wise, but the 2021 version comes with full voice acting, updated artwork and all of the bonus content ever released for the game

From there the chronological order goes Book Of Shadows -> Hysterical Birthday -> Blood Drive
Some consider Hysterical Birthday to be skipable, since it's more off a lighhearted comedy spin off, but it does introduce plot points and characters that become important later on in Blood Drive and the game is technically canon
