That might be true overall, but I'd say it's still not so simple as the 2021 version being "just better," since the original version does some things better.
Like for example, the 2021 remake version has toned down how shocking & visceral one of the key scenes is, by re-drawing the assets in a much tamer way than how they appeared in the original version.
Going from here, the next game chronologically is Book of Shadows and then Blood Drive. You can squeeze the Birthday Spin off game between Book of Shadows and Blood Drive if you want. People heavily debate whether it's canon or not, but it does introduce characters that later appear in Blood Drive

Although the second comparison video of one of the best examples that I cited in that post has since been deleted from youtube, although it probably wouldn't be that hard to find equivalent footage on another youtube channel.
I'm not sure if "censored" is exactly the right word for the differences though, because it could just be the artists of the 2021 version happened to draw the assets differently, and it's possible that they were not given specific directions to censor the older stuff in some of the examples where the new version is toned down.
But in any case, even if they weren't deliberately "trying" to censor the game, definitely the original version has some elements that are much more visceral and that were toned-down in the 2021 version, whether through deliberate intention or through the art just happened to turn out like that when they re-created it without consciously thinking about what they were changing.
The 2021 version is probably still the better version of the game, overall, though, even though it has some toned down elements.
So I'm not necessarily advocating for the earlier version over & instead of the newer version, even though some parts of the older version are better.
Probably to get the ultimate experience, one would need to play through both versions (but that would also involve a lot of tedium of going through the same material twice).

Now I'm 100% convinced that they deliberately censored stuff.
Here is new proof of that:
44:30 into this video, the male character doesn't understand why the female character is bleeding, which is supposed to be because she is menstruating:

The dialogue is still there, but there is no visual indication upon the character that she is menstruating, because Mages clearly deliberately censored it in the 2021 version, which you can verify by playing the video beyond the 44:30 timestamp where the dialogue occurs, and see that the character has no visual markings to indicate her menstruation.
Or, you could also go back to around 43:44 of this 2021 version video, where the visual mark should be present before the embarrassing conversation actually occurs, but it isn't (neither before nor after the conversation).

Starting around 35:49, the same scene, you can see the character model has her menstruation clearly visually marked on herself, which has subsequently been completely sanitized and erased in the 2021 version that I just linked to above.

To me that is 100% clear proof of censorship.
And by the way, the examples I've given in this thread are just things that I happened to stumble upon by happenstance.
I've never done a scene-by-scene comparison between both versions or anything like that. If I did, then chances are I would have uncovered a lot more examples of censorship than just the major ones I've pointed out with videos in this thread so far.
In other words, without a comprehensive study being done, there is no possible way for us to know the full extent of everything that was censored in the 2021 version.
In the original release of Blood Covered, every chapter has its own sprite files, and these often have differences between them. For example, fixed pixels in some sprites in later chapters, are still incorrect in prior chapters. If these files were to be consolidated into a single folder you'd run into inconsistencies and problems because they are different between chapters, despite using identical filenames in many cases. One of the noticeable cases in Blood Covered (PC) is Ayumi's socks mysteriously changing color in one frame of her left/right walk cycle in every chapter except Chapter 5, where it was fixed.
Ayumi's standard standing/walking sprite is titled 04_ayumi. For the blood effect in this chapter (it's actually also in chapter 4) they simply edited that sprite instead of adding a new sprite with a different name. However in the 3DS version, for space and optimization reasons no doubt, all of the sprites were consolidated into a single folder when the sprites were remade. On 3DS (by MAGES.), this was accounted for, and the sprites of her with the blood are still intact in a separate folder -- there are two distinct copies of 04_ayumi.
However, in the 2021 version (made in Unity by a different developer than MAGES. entirely), somehow the game continues to use the older texture even in Chapter 4 and 5. Some sprites of Ayumi with the blood ARE used in the 2021 version, of action poses she only does in those chapters -- only the one of her standing and walking normally is somehow using the incorrect texture. However, the texture still exists with the blood, and I should be able to identify why it's loading the wrong one and fix it. Either way, at some point in development (seemingly the bug might exist in the European 3DS version as well), the issue crept in.
Unfortunately I am unable to modify this in the console versions of 2021 however as they are not handled by me, but either way it's very much the case that there wasn't intentional censorship here. Just a bug in loading between two textures with identical filenames after all the sprite files were consolidated to reduce the amount of file duplication.
I played through the rest of Chapter 5 of the 2021 version now and I did indeed notice that the correct texture is used a few times in the 2021 version, such as in the scene where Miss Yui dies, and also briefly in the scene where Ayumi is in the pit shortly after that.
Although it's definitely far less prevalent than it is in the previous version(s).
