Can't establish right to self-defense even though I have a patron
I'm doing a rebel nobleman run and I got the 'Debacle in the Shop' event, now earlier I took Octavia as my patron but despite that the option to establish a right to self-defense is locked. I'm really not sure what to do here.

The thing is, you have to get a specific patron for this scene. Specifically, you have to increase your Career up to 8, trigger "An Audience with the Overseer" and accept Gaius Tempest's promotion. Then, if you increase Justice up to 8 as well, you can use Gaius's help to establish right of self-defense.
If you want to do a rebel run, remember that accepting help from Gaius counts as betrayal of El Borne, so you can't put Otton on trial. Your best bet is to maintain Justice at 10 and trigger the "Unchained" ending.

I was thinking of El Farro's deal, but I still don't understand why Octavia doesn't count as a powerful patron. She's literally Arknian royalty, who are above the law in almost all aspects

Because your affair with Octavia is secret and kind of illegal. You can't really use "I have sex with the Archduchess" as a valid political leverage. There are some situations where Octavia can help you, but they are just that - situations.
Besides, Octavia doesn't really give a crap about politics.
As for El Ferro's deal, personally I think it's the least useful Patronage. It comes late in the chapter and costs you too much with not that big a boost in Career. If you want to make a deal with the devil, might as well pick the best devil (Remy El Verman).

It does. But getting any Patronage counts as betrayal of El Borne (the exception being patronage of El Ferro, which still requires to make a very evil decision). Staying loyal to El Borne basically requires having no patrons and sacrificing your career for the sake of justice.

You can also try to put Otto to trial of sword where Overseer beats the crap out of him.

I've meant the best devil for you. In the Noble run, you can abuse your partnership with Remy pretty hard and gain a lot.

There is one path where Remy lives. It's the Lotless route where you stop the Revolt from ever happening.
