1. Turret has no external sign : < 50% overheat
2. Turret has a white smoke : 50% ~ 75% overheat
3. Turret has black smoke and electrical arc : > 75% overheat
4. Turret is destroyed, black smoke, electrical arc and burning fire. You can still interact, pick it up and put it back again.
The turret gain overheat in two ways : shooting and getting damaged. That includes environmental damage but not grenadier gas smoke. A bulldozer for example can shred your turret as quickly as it shred your team but the good part is that he rarely focus it (however if you put your sentry in front of you, well consider it destroyed).
If you get in custody however, your turret is instantly removed and you gain back the charge. In long map to escape, like NRFTW, you can get custody in the vault, respawn only near the escape van and immediatly you are able to put down your turret again. You won't have to return to the bank to get it back.
Thanks for the info, but I'm still puzzled why my sentry disappeared
I ended up getting the achievement on Touch the Sky
