I cant find a proper word but I dunno. To funky? There is a lot of guitar riffs where in Payday 2 most of it was electronic or synth with few exeptions.
Also I forgot to mention for example when you hear Razormind you literally know its music from The heist themed movie or game without even reading the title or what its from. Or Evil eye which was from hotline miami DLC which sounds brutal because hotline Miami was violent game.

Because god forbid Overkill from trying something new and different...
I for one welcome some change to the style, Payday 3 needs to build its own identity instead of leeching off Payday 2. You can always just play 2 and enjoy the old stuff.
