Funny you say that, wikipedia definition of Mobile Infantry
Mobile infantry refers to infantry that has superior mobility to traditional infantry, the latter being expected to march into battle. Mobile infantry, on the other hand, is better equipped with vehicles for transportation to and on the battlefield.

That said, we need bigger maps before we introduce vehicles. I'd love to see one or two logistics/transport truck with a self-defense HMG on top or something. Along with a troop transport aircraft.
I really don't want to see offensive vehicles though. Just a personal preference.
I wonder if they will ever have a movie more focused on the book. Of course people will say they are basically more mobile terminators from Warhammer 40k.
In the movie (Which the game is based off of, not the book), they did not have weaponized suits of armor. Nor do we. We have ENHANCED armor that enhances our movement (I think, I don't believe the lore clarifies this), but its not a weaponized battlesuit like the books.
The only thing that really makes sense, is that there were vehicles in the movies, they were just never portrayed, besides the airships. You aren't going to be moving around a planetary battlefield like they were by walking.
the movie verse ( 1, 2, 3 and the two animated films) basically shows a gradual evolution into the jumpjetting weapons of mass destruction wielding power armored troopers
that said the only "vehicle" that have been prominently depicted on screen would be the marauder mech suit
2. Most terrain is NOT TRAVERSABLE by anything safe the marauder mechs. And they are for those that where death sentenced OR the elite of the elite handpicked by Johny Rico (at this point ONLY picked by Rico.. after Mars the Marauder project was DEAD if you didnt notice, and we are CLEARLY AFTER MARS in timeline!)
Not really. Read the book. It is stated quite clearly there. The Mobile Infantry is a branch of the armed forces whose soldiers wear powered exoskeletons which enable them to move faster and jump higher. The (space) navy carries them from planet to planet.
Hunters with jetpacks are closer to the book than the movie, and nothing like that is featured at all in the movie anyway. There are also references to moving "on the bounce", which again comes from the book. So I feel quite confident that they are mixing from both, taking whatever makes sense and making a third version of it all.
Additionally, I wonder if the on-building fixed cannons/turrets are going to get usable. By now they are kind of a decoration. It would be nice being able to use the using the "F" key or whatever and especially shoot the big bugs.
...a mobile suit of armor would be a kind of vehicle... halfway through the game we don't even see them
We spend a good chunk of the game as, at best, light infantry. Not even "mobile" infantry by the definition you provided
